Chicken Macaroni

Ingredients:

400 gms - macaroni / elbow pasta

1.5 lbs medium pieces chicken

6 large onions sliced

3 tomatoes chopped

1 small bunch frresh coriander leaves chopped

1 cup fresh mint leaves chopped

3 tbsps oil

1 tsp ginger garlic paste

2 tsps coriander powder

1/ 2 tsp chili powder

1 pinch turmeric powder

2 tbsps plain yogurt/ curd

3 cardamoms

3 cloves

3 pieces cinnamon stick

1 /2 – 1 cup coconut milk (as per your taste)

salt to taste


Preparation:


  • Bring water to a boil, season with salt and cook macaroni until done.Drain , rinse with cold water and set aside.
  • Meanwhile, heat the oil in a pressure cooker or pan.
  • Add the ginger garlic paste and fry a few mins.
  • Add the onions and whole spices, season with salt , cover and cook a few mins.
  • Add the tomatoes, mint and coriander leaves, chili, coriander and turmeric powders.Mix well , cover and let it cook till well done.
  • Add the chicken and yogurt.Simmer or pressure cook till the chicken is done.
  • Add the coconut milk, mix and let it cook till the masala is thick.
  • Pour the chicken masala over the pasta and toss till evenly mixed.
  • Enjoy with fresh raitha!
