Mint and Coriander Chicken

Ingredients:


1 Lb Chicken cut into medium pieces

To Grind:


1 small Red Onion
1 Tomato
5 Cloves Garlic
1" Ginger chopped
3 Green Chillies
1/2 Cup Coriander Leaves
1/2 Cup Mint Leaves
Salt to taste
1 Tbsp Oil

To Marinate:

2 Tsp Ginger-Garlic Paste
1/2 Tsp Chilli Powder
1/4 Tsp Turmeric Powder
1/2 Tsp lime Juice
Salt to taste

Preparation:

  • Mix chicken with ginger-garlic paste, chilli powder, turmeric powder, salt and lemon juice
  • Marinate for an hour.
  • Heat 1 tbsp oil in a pan add chopped onion, green chillies, ginger and garlic. Saute till transparent.
  • Add chopped tomato. Fry till soft. To this add mint and coriander leaves. Fry for 5 minutes.
  • Remove from fire, cool and grind to paste with out adding water.
  • Heat 1 tbsp oil in a pan and add chicken along with the ground paste.
  • Cook till chicken is done and oil separates.
